If you're looking for a quick, protein-packed lunch that doesn’t require any fancy ingredients, this chickpea “no-tuna” salad is a must-try. It’s creamy, tangy, crunchy, and satisfying — all without a hint of fish.
This recipe became one of my go-to plant-based staples when I started transitioning to a whole-food, plant-based lifestyle for health reasons. It’s easy to make ahead, endlessly adaptable, and honestly just hits the spot when you want something comforting and flavorful.

🧾 Ingredients
1 can (15 oz) chickpeas, drained and rinsed
3 T tahini
1 celery stalk, finely chopped
1–2 T red onion, finely chopped
1 t Dijon mustard
1 T maple syrup
¼ c diced pickle
1 T diced capers
Salt + pepper to taste
Optional: garlic powder, chopped dill, parsley or a dash of smoked paprika
👩🍳 How to Make It
Mash the chickpeas in a mixing bowl using a fork or potato masher — leave some texture.
Add the rest of the ingredients and mix until well combined.
Taste and adjust seasoning as needed.
Serve on whole grain bread, in lettuce wraps, or with crackers.
✨ Pro tip: It gets even better after sitting in the fridge for an hour or two.
